Baking powder in the shortcrust pastry: Yes or Not? – Pasta Frolla: Lievito Si O Lievito No?
One of the reasons why I love shortcrust pastry is its versatility. There are many recipes and many variations and it remains the ideal base for various kinds of pies and biscuits.
In this article, I would like to explore the issue of baking powder. There are those who argue that the baking powder should not be added to the pastry at all, and those who argue otherwise. But what would be the correct answer? IT DEPENDS!
In fact, the grandmothers’ recipes don’t include baking powder. But the pastry-making has evolved over the years and even the best pastry chefs now recommend using a little baking powder in some recipes. Why?
The difference lies in the friability that the baking powder gives to the shortcrust pastry.
I try to explain better. I baked the same recipe (which you can find at this link) to make two jam tarts. The one you see in the photo with the lightest mango jam is with baking powder. The darker one, with sour cherry jam and without baking powder.
After several tastings, we were unable to decide which one was better. It’s just a matter of taste! Try and decide which one you like most.
In the tart with baking powder, the consistency is more crunchy. The shortcrust pastry rises a little bit during rest and in cooking. The result is a softer and brittle tart, almost as if it were a shortcrust pie. I also put pictures of the two tarts to understand the differences.
The baking powder free tart, on the other hand, is more crunchy, similar to biscuits that are generally sold in ovens as “dried pastry”.

Uno dei motivi per i quali amo la pasta frolla è la sua versatilità. Esistono moltissime ricette e moltissime varianti e resta la base ideale per crostate e biscotti di vario genere.
In questo articolo vorrei però approfondire la questione del lievito. C’è chi sostiene che il lievito non vada assolutamente aggiunto nella frolla, e chi invece sostiene il contrario. Ma quale sarebbe la risposta esatta? DIPENDE!
In effetti la ricetta della frolla come la intendono le nonne non prevede lievito. Però la pasticceria si è evoluta nel corso degli anni e anche i migliori pasticceri ormai consigliano di usare un pochino di lievito in alcune ricette. Perché?
La differenza sostanziale risiede nella friabilità che il lievito conferisce all’impasto.
Cerco di spiegarmi meglio. Ho utilizzato la stessa ricetta (che trovate a questo link) per fare due crostate. Quella che vedete in foto con la marmellata più chiara, di mango, è con il lievito. Quella più scura, con la marmellata di visciole e senza lievito.
Dopo diversi assaggi non siamo riusciti a decidere quale fosse più buona. E’ soltanto una questione di gusti! Provate e decidete voi stessi quale vi piace di più.
Nella crostata con il lievito la consistenza è più friabile. L’impasto lievita un pochino sia durante il riposo che in cottura. Il risultato è una crostata più morbida e friabile, quasi come se fosse una torta di frolla. Vi ho messo anche le immagini delle due crostate per capire le differenze.
La crostata senza lievito invece risulta più croccante, simile ai biscotti che in genere vengono venduti nei forni come “pasticceria secca”.
