Melt the yeast in a little water taken from the total. Sciogliere il lievito in un pochino di acqua presa dal totale. |

Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself (pulling the edges of the dough and folding them towards the center in every direction, right/left/above/below) once or twice. Rovesciate ora l'impasto su una spianatoia spolverizzata di semola o farina. Stendete un po' l'impasto con le mani e procedete con le pieghe (tirando i lembi dell'impasto e ripiegandoli verso il centro in ogni direzione, destra/sinistra/sopra/sotto). |

Pre-heat oven to 230°C (conventional oven). Put a heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is O.K. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 20 minutes, until loaf is beautifully browned. Cool on a rack. Preriscaldare il forno a 230°C (statico) e mettere la pentola vuota nel forno, che dovrà essere rovente quando metterete il pane a cucinare. |

If you'd like to bake the bread on a baking tray the cooking time will be about 50 minutes. TIP: to really understand if the bread is also cooked inside you have to "knock" with a punch under the loaf. If the sound you hear is an empty and not full sound, the bread is ready to be baked! NB. Se non avete una pentola adatta per la cottura in forno potete cuocere il pane su una teglia da forno per circa 50 minuti. Vi assicuro che sarà comunque buonissimo! TIP: per capire davvero se il pane è cotto anche dentro dovete "bussare" con un pugno sotto la pagnotta. Se il suono che sentite è un suono vuoto e non pieno, il pane è pronto per essere sfornato! |
