I tasted popovers on my last trip to New York. I was eating in a very nice restaurant (then I figured out it is famous for popovers). They served us still warm popovers, with a cup of delicious salted butter. I was fascinated by them. Good and very light, with a crispy crust outside but super leavened inside. I went to look for the recipe immediately and guess what? There is no yeast! Incredible.
The magic of their special consistency lies in the fact that cooking steam created inside makes them grow a lot. Moreover, you can eat them both with salty food, but also – for example – at breakfast with jams, chocolate cream, peanuts butter, etc.

Ho assaggiato i popovers nel mio ultimo viaggio a New york. Ero in un ristorante carinissimo che poi ho scoperto essere famoso per i popovers. Ci hanno servito i popovers ancora caldi, con una ciotolina di burro salato buonissimo. Ne sono rimasta affascinata. Buoni e leggerissimi, con una crosticina croccante fuori ma super lievitati dentro. Sono andata a cercare subito la ricetta e indovinate un pò? Non c’è lievito! Incredibile.
La magia della loro consistenza speciale risiede nel fatto che con la cottura si crea del vapore all’interno che li fa crescere tantissimo. Inoltre possono essere gustati sia con il salato, ma anche per esempio a colazione con marmellate o creme spalmabili.

In a medium bowl, beat eggs slightly. Blend in remaining ingredients, just until smooth. In una ciotola media, sbattere leggermente le uova con il sale. Aggiungere i restanti ingredienti e mescolare. Evitate di mescolare troppo l'impasto. Il risultato che dovete ottenere è simile alla pastella dei pancake o delle crepes. |

Fill cups about half full. Top each popover with approximately 2 1/2 tbsp of the grated gruyere cheese (if you would like to eat them as a dessert don't use the gruyere). Bake for 20 minutes. Reduce oven temperature to 175°C and bake 20 minutes longer, or until golden brown. Serve immediately. Riempite gli stampi fino a metà. Volendo potete aggiungere della gruviera grattuggiata e spolverizzata sopra l'impasto, per creare una crosticina gustosa sopra i popovers (da non aggiungere se si vogliono gustare dolci). Cuocere per 20 minuti. Ridurre la temperatura del forno a 175°C e cuocere per altri 15/20 minuti (fino a doratura). Servire immediatamente. |

Makes 6 large popovers (or 12 small). Queste dosi sono per 6 popovers grandi. Se utilizzate stampi più piccoli potete farne 12. Tenete sempre presente che dovete riempire lo stampo fino alla metà circa. I popovers cresceranno molto in cottura, come potete vedere nelle foto. Servite immediatamente quando sono ancora caldi. |
