Directions
A traditional dish from Gaeta, named “Tiella”. In this recipe, I made it with Octopus, but you could use other ingredients and make it, for example, an excellent vegetarian dish!
You can fill it as you like. The most used and traditional foods to fill a Tiella are usually octopus, squid, escarole and olives, spinach, salted codfish, zucchini, onions, anchovies, mussels, etc.
You could also use the same recipe for making an octopus and potatoes salad.
Un piatto tradizionale che nasce a Gaeta e si diffonde ben oltre il suo territorio per la sua bontà! In questa variante potete vedere la ricetta della tipica tiella con i polpi. Ma potete tranquillamente utilizzare altri ingredienti e farlo diventare, per esempio, un ottimo piatto vegetariano!
Si può farcire a piacere. Gli alimenti più utilizzati e tradizionali per riempire una Tiella sono solitamente polpi, calamari, scarola e olive, spinaci, baccalà, zucchine, cipolle, alici, cozze, ecc.
Potete usare la stessa ricetta anche per preparare un’insalata di polpo e patate.

Boil the octopus in boiling salted water for about 30 minutes. Before lowering the octopus into the water you have to take it from the head and dip it up and down 3/4 times to make the tentacles curl. See if it's cooked by sticking a fork into the head. Let it cool in the cooking water. Once cold, cut it into small pieces and season with all the other ingredients. Lessare il polpo in acqua bollente salata per 30 minuti circa. Prima di calare il polpo in acqua bisogna prenderlo dalla testa e immergerlo su e giù 3/4 volte per far arricciare i tentacoli. Vedere se è cotto infilando una forchetta nella testa. Farlo raffreddare nell'acqua di cottura. Una volta freddo tagliarlo a pezzettini e condire con tutti gli altri ingredienti del ripieno. |

Spread a layer of dough with a thickness of about 1 cm or a little less and line a cake pan of 26 cm in diameter with the bottom greased with EVO oil. Stendere uno strato di impasto dello spessore di circa 1 cm o poco meno e rivestire una tortiera si 26 cm di diametro con il fondo unto di olio EVO. Bake in a conventional oven at 180° C for 30 minutes on the lowest rack of the oven and continue cooking for another 15 minutes on the top rack, or until golden brown. Serve lukewarm. Cuocere in forno statico a 180°C per 30 minuti sul ripiano più basso del forno e proseguire la cottura altri 15 minuti nel ripiano più alto, o comunque fino a doratura. Servire tiepida. |
