According to a legend, the first pastiera was prepared by the mermaid Partenope. The first mermaid chef in history? The Neapolitans gave her the ingredients that are used to prepare this traditional dessert to thank her for having founded the city and for protecting its inhabitants. So, she decided to make the first pastiera in history.
Today we are going to make the Antonino Cannavacciuolo’s pastiera recipe. He is well known in Italy for his talent.
It’s not really easy to make but it’s worth it!
Secondo una leggenda la prima pastiera venne preparata dalla sirena Partenope. La prima mermaid chef della storia? Si narra che i napoletani le donarono gli ingredienti che si usano per preparare questo dolce tipico della tradizione per ringraziarla di aver fondato la città e di proteggere i suoi abitanti. Lei decise così di realizzare la prima pastiera della storia.
Quella che vi propongo oggi è la versione dello chef Antonino Cannavacciuolo, che direi non ha bisogno di presentazioni.
Non è un dolce di semplice realizzazione ma, vi assicuro, ne vale la pena!

Mix the ingredients of step B in a stand mixer or with an electric mixer; combine the two mixtures adding the candied fruits and the orange blossom aroma. I have blended in a mixer the candied fruits with some wheat because I do not like their consistency very much but it is not possible to eliminate them to have the right balance of flavors. Montare gli ingredienti del procedimento B in una planetaria o con lo sbattitore elettrico; unite i due composti aggiungendo anche i canditi e l’aroma di fiori d’arancio. Io i canditi li ho frullati con un po' di grano perché non amo molto la loro consistenza ma non è possibile eliminarli per avere il giusto equilibrio di sapori. |

Grease or cover with parchment paper a tart pan. Line a tart pan (26/28 cm in diameter) with the shortcrust pastry, leaving a little aside. Now, prick the bottom of the pastry with a fork and fill with the cream filling obtained. With the pastry left over, form strips and weave them on the surface of the cake; bake in a conventional oven at 190° for about an hour. Check the internal cooking of the pastiera with a wooden toothpick. Imburrare e infarinare una tortiera per pastiera (o crostata) oppure rivestirla con carta forno. Foderare una tortiera da 26/28 cm di diametro con la pasta frolla, lasciandone un po’ da parte, bucare il fondo con i rebbi di una forchetta e riempire con il composto ottenuto. |

When cooked, turn off the oven and leave it to firm in the oven for at least an hour and 30 minutes. When the cake has cooled, take it out carefully and serve at room temperature. A cottura ultimata, spegnete il forno e lasciate rassodare a forno socchiuso per almeno un’ora e 30 minuti. Quando la torta è raffreddata, sformatela con attenzione e servite a temperatura ambiente. |
